Our interpretation of a Belgian Singel, a brew often only consumed by monks. Loaded with aromas of dark fruits and pears and coupled with a taste of Belgian candy sugar and hints of chocolate.Brewed to be light in ABV so you can enjoy this beer without being overwhelmed.
A formulation of seven malts, three floral hops, and an English yeast strain lend to the stratification of flavors in this brew. Notes of jam on bread, burned sugar, earth,and oak all intermingle alongside a crisp finish that lingers on the palate, without being too heavy.

This beer is crafted with care and time. We begin with Belgian pilsner malt, rye, and white wheat. In the boil kettle we add German Opal, French Triskel, and German Tettnang hops.In fermentation we begin with a saccharomyces strain of yeast from western Belgium. We let that yeast strain do its work and when it is finished we let a strain of brettanomyces claussenii take over. What is created is an elegant beer laced with aromas of pineapple, guava, jasmine and herbs. Subtly sweet and spicy on the palate and finishing with a lingering dryness.

High alpha-acid hops help tame this beast and give a peppery, earthy flavor that carries throughout the entire sip. A truly big beer.
