This "tepache" inspired wild golden ale began with the open fermenting of whole pineapples in our 300 gallon coolship.Ceylon cinnamon and dark brown sugar were added to further the evolution of flavors and hint at this drinks' origins in Pre-Columbian Mexico. Divide Ethos Coolship #001 is our first spontaneously fermented release in our Coolship series of beers. Our Divide Ethos Spontaneous series starts with a grist of malted barley,raw wheat, and aged hops. The turbid mash is slowly cooled overnight in our coolship, and naturally inoculated with a wide spectrum of local microbes. Then the wort is moved into neutral oak barrels for spontaneous fermentation and aging. This rare beer honors the relative uncertainty of each season, through rigorous quality testing and ongoing vigilant experimentation, to yield an interpretation that could only be produced by us, here and now.

100% oak fermented tart farmhouse ale. We use a free-rise solara process, with our own house strain of Brettanomyces. The result is a crisp, rustic farmhouse with a nice level of tartness.A perfect entry into the world of Paradox. Variant 7 pours champagne-like, with tight bubbles. The nose is tropical, hay, over-ripe fruit., a tad musky. All Colorado malts in this beer add to the mouthfeel and full body, Lemondrop hops provide a citrusy, lemon zest flavor that lightly lingers. The finish is crisp and dry, inviting one to take another sip.
