Chilaquil is a family run affair started byowner and chef Orlando Aguirre who wanted to introduce Texans to his favorite Mexican dish, chilaquiles. Most of us are familiar with a lot of Mexican cuisines, with taco trucks selling burritos, tacos, and empanadas found on every corner. But how many people know what chilaquiles are? It's a Mexican niche that has yet to be filled, and Chilaquil is making a valiant attempt to educate us all.
Chilaquiles are simply strips of fried corn tortillas that are simmered in salsa and then served with a variety of toppings. The base version sounds delicious, and Chilaquil takes it a step further, adding in extras like beans or chorizo and avocado. There's even a vegan version called the Chilango bowl that features salsa verde, nopalitos, and avocado.
The menu has also expanded to include other snacks and desserts, so there's something here for everyone. And you can be guaranteed of the authenticity and freshness of the ingredients; Orlando drives through to Mexico often to pick up local ingredients and spices. The truck is open every day, so there's no excuse to come educate your taste buds on a little known Mexican dish.
