Koi Fusion is what happened when Bo Kwon, the child of Korean immigrants, grew up in America and learned how to blend the food of two different cultures. After learning of the wild success of a Korean food truck in LA, he correctly guessed Portland needed one as well, and voila!
If you’ve never tried a Korean-style burrito, just wait to you get your hands on one. Choose your protein (short rib, chicken, tofu, pork or bulgogi). It’s then mixed with Korean seasoning rice, cabbage slaw, cucumber, cilantro, shredded cheese, bean sprout, and salsa and topped onto a flour tortilla. The mix of flavors is brilliant. If you want to switch up the way you do party food, order a batch of Seoul sliders made with meat, tillamook cheddar cheese, wasabi mayo, cabbage slaw all loaded onto a tiny bun.
