The Lomito food truck team takes great pride in using only the freshest ingredients in their foods, creating uniquely Peruvian dishes for Denverites hungry for South American yummies. They love to say that they're "Colorado's ONLY Peruvian restaurant on wheels!"And they are! Nowhere else will you find tallarinverde, the delectable Peruvian "green spaghetti" dish sautéed with evaporated milk, spinach, cheese, potatoes and basil.If you're in a South American seafood kind of mood, the ceviche mixto with octopus, shrimp, calamari, white fish, cilantro, sweet potatoes, and Peruvian corn is so incredible that you'll be wondering if you've ever really had ceviche before. If you're in more of a sandwich mood, the pan con chicharron (Peruvian pork sandwich) features juicy, braised pork, slices of fried sweet potatoes topped with a pickled lime and an onion salsa that gives the sandwich it's salty, sweet flavor.
