Run by Chef Luke Bibby and his wife, Tracy, Luke's Inside Out is an ambitious take on gourmet trailer food. Situated next to the Gibson Bar, visitors can enjoy Luke's take on sandwiches while enjoying the air-conditioning, seating, and drinks from the Gibson Bar.
So what exactly is an Inside Out sandwich? The French loaves are sliced and coated with Parmesan before being toasted on a grill. The toasted edge goes inside the sandwich, with the untoasted side left on the outside, making the sandwich inside out. The fillings are just as interesting and novel. From Szechuan chicken to BBQ pork, mozzarella topped with grilled peach; you won't find grub like this anywhere else.
And if that's still not creative enough for you, Luke makes one additional off-the-menu sandwich every day as well as three appetizers. One of the winners of the special sandwich has to be the Sloppy Korean empanadas, made of Korean-spiced beef and kimchi baked into a tender pastry and served with a complex sour cream sauce. Once you've had it, you'll be raving to your friends about this place.
Luke's Inside Out is an experience you need to taste to believe. And if one sandwich isn't enough, there is also an all-you-can-eat buffet on Sundays, which is sure to satisfy any cravings you might still have after a late night.
