Owned and operated by Tim and Sarah Arkwright, the Egg Carton is the perfect Portland food cart to pick up breakfast and beverages. Located on the corner of Foster and 52nd, it's where to go to get delicious, homemade breakfast favorites that have been made with love.
If you love eggs benedict, you'll adore the fact that The Egg Carton offers three versions of it, including one with Canadian bacon, one with basil and tomato, and a Cajun-style one loaded with Andouille sausage. One extremely popular item here is the FoPo Cristo. Named after the Foster-Powell area, this Monte-Cristo-style sandwich is stuffed with soft-fried egg, bacon, sweet/spicy mustard, cheddar cheese, Canadian bacon and strawberry jam. It is stuffed into thick slices of French toast and sprinkled with powdered sugar. It will use up all your diet points for the day, but it will be so incredibly worth it.
If you're thinking of going more simple, the classic French toast with maple Bourbon syrup is lighter but still insanely rich and heavenly. Add strawberries and whipped cream to hit true decadence levels. If your goal is to leave feeling exceptionally wicked, order up the rosemary sweet potato home fries as a side. You won't be able to move, but you'll be happy.
