Uncle Tapas is another great food truck serving all the great Spanish American food that zaps away hunger while you're out and about or on the go. Friends John and Jeff, the proprietors, met while working in a local Denver brewery. They have fun serving up tapas ("small plates") to the hungry Denver hordes who've become avid Uncle Tapas converts. The seared sushi-grade tuna with unagi sauce and sprinkled with chives is served on skewers is eyes-rolled-back-in-your-head delicious. Absolute bestsellers are the fresh Wisconsin cheese curds that are flown in fresh every Wednesday, and they're served with a deliciously sweet dipping sauce. Another hugely popular dish is the Cuban sandwich made with mojo pork, honey-baked ham, pickle, mustard, mayo, and swiss cheese, pressed into a gorgeous roll before being heated on a grill. Uncle Tapas' caprese is a mild mozzarella with fresh basil and tomatoes in a balsamic reduction. The choice tenderloin filet is made with blue cheese and onion crisps, and it is served on top of tasty crostini bread. It seems like this would all come out of a restaurant down on Larimer Square, but instead it all comes out of a food truck. It should now be clear why Uncle Tapas is so popular.
