People with vegan and plant-based lifestyles also get hungry while they're out and about. Getting street food that meets their requirements used to be tricky, but there are amazing food trucks out there now that are filling in the gaps. Denver's Vegan Van is one of them. The current owners are vegan chefs who worked with and then took over from the original owner of the van, Amie Arias, when she decided to move on to new amazing things. Options are varied, delicious, and loaded with flavor. The Baconator is a house burger served with cheddar, crispy onion rings, sweet and spicy BBQ, seitan bacon and delicious, homemade fries. Yum! The "Planet Rock" is intense buffalo tofu and ranch cabbage coleslaw that's piled high on a bun and served with crunchy chips. Spice girls and guys will do well with the "Fire In the Hole," a house burger load with sriracha mayo, pepper jack cheese, pineapple pico and french fries. The "Tofacos" are made with scrambled tofu, house sausage and salsa served on top of whole wheat tortillas. With the "Bacon and the Beast," you get tofu, potatoes, seitan bacon, cheddar cheese, and green chili rolled up in a flour tortilla.
